If the Mediterranean diet has been put on the UNESCO World Cup heritage list, there must be a reason … AND what is the queen of Mediterranean tables if not pasta?
For a lunch break rich in flavour and fibre, here is a fresh, delicious idea that combines salmon and avocado!
Ingredients (for 4 persons)
- 400 g of Fibrextra Whole Wheat spaghetti
- 300 g of smoked salmon
- 1 avocado
- 1 leek
- Lemon zest
- Extra-virgin olive oil (to taste)
- Salt and pepper (to taste)
Cook the spaghetti in a pot of boiling water. In the meantime, slice the smoked salmon and blend the avocado, with a little of the water from the pasta. Chop the chives and put it aside. Slice the leek and place it in a frying pan with a little oil on a low flame, then add the avocado. Drain the spaghetti al dente and cook it in the frying pan until the spaghetti becomes lucid.
Place the pasta on the plates adding the sliced salmon and, lastly, garnish with the chives, lemon zest and black pepper to taste.
