Amaze your friends after dinner or indulge yourself whenever you like? Any reason is a good reason for the practical, scrumptious cheesecake in a glass with Fibrextra biscuits with Muesli.
Ingredients
- 250 g Muesli Fibrextra Biscuits with Cereals, Chocolate and Fruit
- 500 g cream cheese
- Oil 65 mL
- Fresh liquid cream 200 g
- Confectioners’ sugar 120 g
- Juice from lemon 2-3 tablespoons
- Strawberries (not very big) 250 g
- Strawberries for garnish 100 g
- Gelatin sheet 7 g
- Sugar 60 g
Preparation
Crumble the Fibrextra Muesli biscuits. Place the pulverized biscuits into the oil and mix carefully with a spatula. Pack the mixture on the bottom of the glasses and place in the refrigerator for at least half an hour.
Whip the cream cheese with an electric mixer, add the vanilla-flavoured confectioners’ sugar and blend until you obtain a smooth mixture. Place the gelatin sheet in a bowl with cold water for 10 minutes. Heat 4 tablespoons of cream in a saucepan, squeeze the gelatin sheet and add it to the cream, mixing until it is completely dissolved.
Let cool and add everything to the cream cheese. Mix with a whip and then add the whipped cream blending it in with a spatula. Take the glasses with the base from the refrigerator and pour the cream on top, making sure to create an even surface. Let rest in the refrigerator for 5-6 hours.
For the strawberry gelèe, soak the gelatin sheet in cold water. Place the sliced strawberries in a saucepan with sugar and lemon juice and cook over a low flame for five minutes. Blend the mixture in the mixture to obtain a purée. Put everything back on the burner and add the squeezed gelatin sheet, mixing until it is completely dissolved. Let cool and pour the gelèe into the glasses until completely filled.
Keep in the refrigerator for at least four hours and then prepare to enjoy the cheesecake in a glass at anytime of the day!
