Durum wheat semolina

Semolina is the product obtained from the milling of durum wheat. Durum wheat semolina is used to make durum wheat pasta through an extrusion and drying process of the mixture made with water, without the addition of other ingredients.

The quality of the pasta derives precisely from the selection of quality raw materials, starting from the care and selection of the semolina with a high gluten index and good protein content thus guaranteeing our pasta a distinctive taste and excellent cooking consistency.

In fact, to make our Misura whole wheat pasta, we select only 100% ITALIAN WHEAT, from which we obtain our whole wheat  semolina rich in fibre. EXTRUDED THROUGH BRONZE DIES, our pasta has reached the perfect degree of roughness to better hold all condiments.
